Crunchy Egg Salad

Crunchy Egg Salad

Number of Servings: 5


18 hard boiled eggs
1 cup diced red onion
1 cup diced green Bellafina pepper
1 cup diced celery
.5 cup mayo
.25 cup fat free plain yogurt
1 tbs yellow mustard
1 tbs black pepper
1 tbs salt
1 tbs paprika


Hard boil 18 eggs, dice and combine with remaining ingredients. Serve over whole wheat bread or crisp lettuce.
Yields about 5 cups, serving size 1 cup.
