Bailey Farms Ranch-Style Beans

Ingredients:

1 pound dried pinto or cranberry beans
1 pound smoked ham or bacon
1 large white onion
1 large red onion, sliced
1 Tbsp. cumin
2 cups orange juice
2 tbsp. brown sugar
2 Tbsp. chopped cilantro
2 tsp. Bailey Farms Red Habanero Hot Sauce

Instructions:
Put the dried beans in a large bowl and cover with water by a couple of inches and let them soak overnight.

In a large pot set over medium heat, fry the smoked ham or bacon until it becomes crisp, about 10 minutes, then transfer the meat to some paper towels so it can drain. Set aside 3 Tbsp. of the dripping for later use.

With the remaining drippings in the pot over medium-high heat, add the chopped onion, brown sugar and cumin. Saute for about 5 minutes, then stir in the orange juice and hot sauce. Bring the mixture to a boil and add the beans and soaking liquid. Bring the pot back to a boil, then reduce the heat to medium and partially cover it. Let the pot simmer for 2 hours, then remove the lid and let simmer until the beans are tender and the sauce thickens, about 30 minutes. Stir in the bacon and season to taste with salt and pepper.

Heat the reserved drippings and sliced onion in a large saucepan and cook over medium heat until the onions start to brown, about 25 minutes. Season with salt and pepper.

Transfer the beans to a large bowl and top with the caramelized onion.
