Avocado and Mini Bell Pepper Salad

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients:
1 ripe avocado – cut into cubes
1 medium ripe tomato – diced
6 multicolor mini bell peppers sliced into thin rings
1 small-medium cucumber – diced (I like to use Persian cucumbers or English cucumbers)
Juice of 1/2 lemon
Extra virgin olive oil
Salt and pepper to taste

Directions:
Combine cubed avocado, sliced mini bell peppers, diced tomato and diced cucumber in a bowl.  Squeeze juice of 1/2 lemon over mixture and drizzle a little extra virgin olive oil (about 1 tbsp).  Add salt and pepper to taste and gently fold ingredients together.
